Here’s a quick, kid-friendly vegetarian lunch or dinner idea. Quiche is quick and easy to throw together with ingredients on hand, especially if you use refrigerated pie crusts for a speed scratch meal. I like to use Pillsbury or store-brand crusts that are found in the refrigerated biscuit section of the store.
This Basic Quiche recipe from Real Simple Magazine includes Gruyere cheese and flat leaf parsley. Add other veggies as desired.
